Hello. Let me introduce myself. I am Julie's husband, the pastry chef. As Julie mentioned I am currently in training with my colleague Sandra Burns for the National Baking and Pastry Team Championship. This is the 3rd largest pastry competition in the country so the pressure is on!
For all who would like to be a chef or compete, a warning! Yesterday started for me at 6:15 am. Two hours on the computer answering emails and a bit of competition planning. Off to The Hotel for busy Saturday and packing up (took 4 hours!) for trial run at local community college.
We arrived at the school at 10pm- Julie picked me up with kids in tow. All the food scaled and equipment packed. Barely fit in our SUV and Sandra's jeep. Day one starts at 11am so we started at 11pm. Worked until 5am, competition cut-off.
Arrived home at 6am. Julie was up blogging! (Baker called in sick for tomorrow...that's planning ahead!). Julie and I chill for a bit and pass out.
Note: All this pastry competition planning is counter productive to this pastry chef's only true hobby...FOOTBALL! Must get baby Cassia up and get her to watch football with me! Kai is too busy watching Thomas the Train re-runs and Julie could care less about all this. Luckily for this Dad, Mom spent her formative years in Texas so she can get down with football snacks and cold beer. She's been a rock through all the competition training the last 4 months. I have to find a way to make it up to her...
