It has been a busy March with Jimmy getting ready for the ACF's Pastry Chef of the year competition in Indianapolis, me throwing Jimmy a birthday lunch and finally baking my first loaf of bread!
Jimmy's birthday is actually today, (happy birthday Jimmy! We love you! xoxo) but we celebrated on Sunday with a birthday lunch of Thai food cooked by me. The menu was everything that Jimmy liked: chicken sate, fresh spring rolls, mushroom packages, beef salad, green curry, cucumber soup and Thai chicken with garlic rice. Dessert was a candy cake (vanilla cake with Heath bits frosted with a peanut butter and dulce de leche icing) and coconut waffles with fresh mangoes. It was a lot of food for 10 people! Even after sending guests home with food we still had leftovers for the next three days!
Jimmy is competing in the ACF's Pastry Chef of the year competition for best plated dessert. The kids and I got to taste one of the test runs and we loved it! I just hope that the judges feel the same way. I'll give details of the dish on Friday while we watch him compete.
I also finally got around to using Apple to make bread. It was the first loaf of bread I have ever made and it came out really tasty! It's amazing that three ingredients (flour, water & salt) can combine to make something so wonderful! The crust was nice and crusty, the inside was soft, slightly tangy and delicious. We ate half the loaf after it set up. The only hard part of bread making is the waiting for the rises, but it is so worth it! I am excited to explore all the flavors of sour dough bread that I can make.
Now that I have a smart phone I'll be able to blog about our first pastry trip of the year as a family. The first one is coming up tomorrow, so I have a lot of packing to to for me and the three kids.
